Melt Vizyon éclair sauce with bainmarie method or water bath method. When its viscosity is homogenized, when product reaches a smooth and spreadable texture, cool it down to 30-40oC and apply to éclair, cakes and cookies for filling and decoration purposes. Does not form moisture or split surface in the refrigerator.
